There must be something about this recipe that calls to me when things in life are getting stressful! I followed this recipe last semester just before exams, along with a little blog about self help, eating well and positivity- you can read that here! Once again, I am having another go at these sweet treats, giving myself a last bit of energy before exam season really kicks off.
Maybe its a need to procrastinate, or my new favourite phrase ‘proscrasti-bake‘, but these chocolate oaty muffins area a good way to relieve stress and treat yourself all at once. I used slightly different ingredients this time, based on what I could get at the shops. They were:

- 2 Bananas (mashed)
- 2 Eggs
- 2tsp Vanilla extract
- 1tsp Baking soda
- 1 Handful of almonds (chopped)
- 100g Dark choccy (chopped)
- 125g Strawberries (chopped)
- 1tbsp Crunchy natural peanut butter
- 1tbsp Honey
I usually use blueberries, however, I think it might be out of season in Aus at the moment. The strawberries were in fact a pleasant surprise, not at all gooey like I had worried!
My lovely, helpful and beautiful housemate Célia not only took me to buy the ingredients as part of our self-care ice cream run today, but she also leant me the beautiful love heart cake mould. Making the fruity oat muffins even cuter!
These treats are far better for you than cakes or regular muffins, but still give you that warm feeling of comfort food. If you warm them up they are also great with ice cream, adding that little bit extra. Remember, love yourselves, be happy and kind to others and try to find positives in everyday!
